Ingredients

FOR CARROT CAKE:

  • 1 2/3 Cup Avocado Oil
  • 1 Cup Granulated Sugar
  • 2 Teaspoons Baking Soda
  • 1 Cup Packed Brown Sugar
  • 6 Eggs
  • 1 Tablespoon Vanilla Extract
  • 3 1/4 Cups all-purpose Flour
  • 1 Tablespoon Ground Cinnamon
  • 2 Teaspoons Fine Sea Salt
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Ground Nutmeg
  • 1/4 Teaspoon Ground Cloves
  • 1 Pound Finely-grated Fresh Carrots

FOR CREAM CHEESE FROSTING:

  • 3 (8-ounce) Bricks Cream Cheese (Room Temperature)
  • 1 Cup (2 sticks) Salted Butter (Room Temperature)
  • 1 Tablespoon Vanilla Extract
  • 1/2 Teaspoon Fine Sea Salt
  • 6 Cups Powdered Sugar (or more, if needed to thicken)

Supplies

  • 8-inch Round Baking Pans (It’s a three-layer Cake)
  • Baking Spray
  • Large Mixing Bowl (3)
  • A Whisk
  • Spatula

Preparation Directions

  1. Preheat your oven to 350°F. Coat an even layer of baking spray on the three 8-inch round pans.
  2. Add granulated sugar, brown sugar, eggs, and vanilla into a large mixing bowl and whisk them well, until smooth.
  3. Take a separate bowl and add flour, baking powder, nutmeg, cloves, cinnamon, salt, and baking soda. Whisk all the ingredients well.
